It usually takes 4h to 6h to complete preheating. Different varieties, different preheating time, large varieties and dense tissue and thick skin species require a long warm-up time. Zanhuang jujube warm-up time to 6 ~ 8h is appropriate, Po jujube warm-up time is 6h.

Evaporation phase: increase the firepower, within 8 ~ 12 h, so that the temperature of the drying room (referring to the middle temperature of the middle of the oven) rises to 60 ~ 65 °C, do not exceed 70 °C. At this stage, it is necessary to diligently dig up fire, dig out ash, and diligently add coal, so that the fire will be vigorous, and the indoor temperature will be quickly increased, and the free water of the jujube will be greatly evaporated. When the temperature of the jujube body reaches above 60°C and the relative humidity reaches 70%, the ventilation and humidity in the drying room are immediately performed. Generally 8 to 10 times of ventilation and dehumidification per drying cycle. Evaporation phase should also pay attention to the plate and turn date, to avoid excessive local heat. Evaporation phase Zanhuang jujube needs 12~16h, Po jujube 10h.

Drying completed stage: the fire should not be too large, keep the temperature in the drying room not lower than 50 °C. If the relative humidity is higher than 60%, ventilation and dehumidification should be carried out, and the number of times should be reduced as compared with the evaporation stage, and the time should be shortened. Generally takes about 6 hours, Zanhuang jujube needs 8~12h, and jujube 8h is appropriate.
