Aquatic products are uniquely flavored and rich in nutrients, and offer a variety of beneficial elements that are increasingly popular with consumers. 2016 National aquatic production 66,996,500 t, an increase of 3.69% over the previous year; in which aquaculture production of 49.379 million t, an increase of 3.99%; however, the quality of aquatic products quality and safety issues and the situation is worsening. Among them, chemical pollutants are the main cause of food safety accidents in China. Rapid detection can effectively guarantee the quality and safety of aquatic products. To this end, this paper summarizes the application of rapid detection technology for chemical pollutants in aquatic products, and prospects for the development of rapid detection technology.

Food contaminants are direct factors leading to food safety incidents and can be classified into biological pollutants, physical pollutants and chemical pollutants according to their nature. Xue Jianhong et al. found that food safety accidents reported by 1553 media found that chemical pollutants have become the main cause of food safety accidents in China due to environmental pollution, abuse of chemical reagents and their own toxins. Chemical pollutants have become food safety in China. The main cause of the accident, and the aquatic product safety accident exhibition was 6.96% . Food chemical contaminants include pesticide residues, veterinary drug residues, natural toxins, heavy metals, environmental pollutants, and harmful substances formed during food processing.
