(I) Harvesting requirements The mustard used for processing must stop watering and fertilizing 15 days before harvest to avoid excessive water content and affect the quality of processed products. Pickled mustard is usually harvested when the shortened stems are elongated to 8-12 cm and not picked up. Local specialty products have different requirements: Nanchong Dongcai and short shortening stems are harvested at 6-15 cm; Guangdong Mei Cai is only harvested when the buds are about 15 cm high and buds appear. In addition, it is appropriate to harvest in the spring when the plant height is about 15 centimeters and the convulsions begin. For seedlings, it will be harvested 40 days after planting.
(II) Storage characteristics and storage methods Mustard greens are more resistant to storage of green leafy vegetables. Low temperature and high humidity above the freezing point are the ideal storage conditions. Suitable storage temperature is 0 °C, relative humidity above 95% can be stored 30-40 days. Mustard is processed mainly, raw materials must be fresh, so it does not store for a long time. Only temporary storage short-term storage during the harvest season is relatively concentrated. It can be temporarily stored in a well-ventilated shade or under a shed. It is better to temporarily store in a cold storage condition, and avoid stacking.
Processing mustard to produce on-site production in situ, which helps reduce losses and reduce costs. For example, goods need to be transported by short distances. Most of them are used for road transport by automobiles or human and animal husbandry. However, they all need baskets, which are convenient for loading and unloading, and can reduce mechanical injuries. Railway transportation should be pre-cooled to 0-2 °C, the use of insulation cars.
